Recipe – Brown rice and lentil pilaf

I made something new this week and it was a huge success. Firstly, V was saying “mmmm,” and “yummy” between every other bite. I’m so proud to say my 20 month old is such a good eater. Then IM tried it in the evening after he came home from work and loved it.

I wasn’t planning on posting this but as I began writing it into my recipe book, I thought I should write it here too. I didn’t take any photos. Next time.

I served this as the main course for dinner, no meat. It’s pretty filling.


  • 2 1/4 cups water
  • one bullion cube
  • 1/2 cup green lentils, soaked ahead of time for a few hours
  • 1/2 cup brown rice
  • 1 rounded teaspoon ground cumin
  • 2 large carrots
  • 1/2 cup frozen peas


Boil the water and add the bullion cube. Drain the water from the soaking lentils and add the lentils to the pot. Add the brown rice, cover and let simmer for 20 to 30 minutes. When the rice is almost done (the soaked lentils will  have cooked faster), add the peas and carrots. Cook for another 10 to 15 minutes until the carrots are soft.

  1. That looks really tasty. I think I have acquired a pea allergy, and really don’t feel up to try lentils again yet… Have you heard of Better than Bullion? It’s is great need to be refrigerated but MUCH lower in salt. It comes in Chicken and Beef and you can get it at costco in huge bottles.
